It’s National Oatmeal Day today and as I sit here eating my steaming bowl of homemade pumpkin pie oatmeal, I think of all the other ways we can eat oats.

Oats can be used in savory recipes like meatloaf and salmon cakes. Oats are a great substitute for breadcrumbs in these recipes as they are lower in calories and carbs and higher in fiber and contain no sodium. Oats make a great binder and since they don’t provide extra flavor, the seasonings and spices you use come through.
Oats are used in many desserts as well. Think oatmeal raisin cookies or the topping for apple crisp. Granola isn’t a dessert, but oats are the foundation for this recipe. Add some dried fruits and nuts, bake ‘em all together, and you have a delicious snack or breakfast cereal that tastes like a dessert!
